Best Home Made Tacos

We had the best home-made tacos for lunch. We roasted shrimp, corn, and Vidalia onions with cilantro and mint. We added shredded cheese, baby spinach, and halved grape tomatoes. We served it with guacamole and sour cream on warm soft shelled tortillas. The flavors mixed extremely well with the corn and shrimp complementing the sour cream and guacamole to create a wonderful and unique taste sensation.
